Baked Eggs on Puff Pastry
What can I say but I LOVE breakfast! I can eat breakfast any time of day. This is a super easy and yummy dish. The puff pastry is baked in the oven for about 10 minutes until slightly golden brown.
I then punched a few ‘holes’ into the center. Not all the way thru, just enough to create a well. I then stacked up slices of cheese and cooked bacon to create a wall. Finally, I cracked an egg into the middle and cooked until it done to my liking. I like the egg runny, so it was in the oven for about 20 minutes. I finished it off with some green onion, but chives or any other fresh herb would work wonderfully.
I really suggest you try this one. It is also an easy entertaining dish. I prep by cutting the cheese and cooking the bacon the day before. While the eggs cook I usually prep either a field salad or fresh fruit dish depending on the time of day I am serving it.
