Smokey Roasted Chicken

This chicken recipe is quite easy to put together. The smokiness of the spices and the zest of the limes works wonderfully together.  I usually do not use chicken thighs when making chicken dishes, but for this meal I think it is a must.  I chopped it up and served it for tacos but it also works great as a main course with rice and veggies.




Using a heavy bottomed pan, layer the onions, sliced limes and chicken.



Finally, sprinkle with the spices, cover with tin foil, and bake.


What You Need:

1 lb. Skinless Chicken Thighs

1 Sweet Onion

2 Limes

1 teaspoon Smoked Paprika

1 Tablespoon Cayenne Pepper

1/2 teaspoon salt

1/2 teaspoon pepper

What To Do:

Preheat oven to 425 degrees. Slice the onion and limes. Layer the onions in a shallow pan. Top with the limes and then the chicken.  In a small bowl mix the rest of the ingredients together then sprinkle over the chicken.  Cover with tin foil and place in oven.  Bake for 45-50 minutes.
