Black Bean and Rice Salad

This is a nice way to use up left over rice and beans.  To be honest I like to make more rice than we need to I can have this salad the next day. I especially like the salsa instead of salad dressing. It really adds a nice kick.

What You Need: IMG_4537

1 Cup Black Beans

1 Cup Cooked Rice

2 Celery Stalks

1/2 Cup Bell Peppers


Salsa Verde

Salt and Pepper to Taste

What To Do:

Mix all the ingredients together.  Garnish with cilantro and top with salsa. Enjoy
