These are so easy to throw together.  I usually make 2 or 3 of them and freeze them for a quick week night meal anytime.  Another nice part to this meal is that there is usually left over taco meat that I like to use to make a taco salad for lunch the next day.

1 Lb Ground Beef

1 Taco Seasoning Package

Enchilada Sauce

3 Cups Shredded Cheddar Cheese

8 Flour Tortillas

What To Do:

Preheat oven  to 325 degrees. Cook the ground beef in a skillet.  Drain the fat and season according to the package directions.  Place the tortillas between damp paper towels and warm for 30 seconds in the microwave.  This will make them easier to roll and eliminate the need to fry them in oil like traditional enchiladas.  Place a few spoon fills of meat on each tortilla.  Add a handful of cheese and a teaspoon or so of sauce.  Roll up and place in an oven proof dish that has a small amount of enchilada sauce on the bottom.  Once all the enchiladas are ready place in oven and bake for about an hour.
