Today was a busy day. I was so happy that I had had the presence of mind to take out one of my pre made frozen meals! Enchiladas!! When ever I make enchiladas for dinner I like to make a couple extras to freeze for a later date. That way, on days like to day, I am ready for dinner with little stress and prep. And for that matter clean up. I’ve made these before, here is the link to the recipe.
I threw these into the oven at 200 degrees with the tin foil on and then headed off for a massage. When I go back, about an hour later, the house smelled so good I could hardly stand it. I let them cook for about another hour with the tin foil off so that the cheese browned and the sauce bubbled.
I added a salad and we were ready to go with very little clean up. My favorite part!!
