I don’t know what it is about eggs but I just love them.  For breakfast, on pizza, poached egg on salad, and in soup!  This is such a simple and delicious soup. The noodles and eggs won’t freeze so it can only be partially made ahead. But trust me, it is worth the wait.

What You Need:

1 Tablespoon Olive Oil

1/2 Cup Chopped Onion

2 Crushed Garlic Cloves

4 Cups Chicken Broth

Angel Hair Pasta

2 Cups Spinach

2 Eggs

What To Do:

Sauté the diced onions and garlic in olive oil for about 5 minutes.  Add chicken broth and bring to a boil.  Once boiling add uncooked noodles and cook until done.  Stir in spinach and get another pan heating for the eggs.  Fry up the eggs so that the yokes are still runny. Place soup in bowl and place an egg on top.  Enjoy!!!  Serves 2
