Chicken and Artichoke Pasta

This is such an easy pasta dinner to make and it freezes beautifully. Just make sure not to add the bread crumbs until right before you are going to throw it into the oven. I used some of the cooking water from the pasta and Parmesan cheese to make a creamy sauce then I stirred in the cooked chicken and artichoke hearts and baked for about 30 minutes.

What You Need:

2 Cups Penne Pasta

2 Cooked and Chopped Chicken Breasts

1 Can Chopped Artichoke Hearts

1 Cup Parmesan Cheese

1/2 Cup Bread Crumbs

What To Do:

Cook the pasta according to the directions on the package. Reserve about a 1/2 of the pasta water.  Put pasta in an oven proof pan and stir in 1/2 the Parmesan cheese along with some of the water. Stir until you get a nice sauce.  You may have to add  more cheese or water.  Once it is to your liking, discard the rest of the water.  Stir in the chicken and artichokes.  Even out the pasta, then sprinkle with the bread crumbs and parmesan on top and bake in the oven for 30 minutes.
