Zucchini Soup

Zucchini is one of my favorite veggies. I tend to buy it every time I am at the store. Needless to say sometime I over buy. So soup it is.  This is a simple and clean soup that freezes nicely. What You Need:

6 Zucchini,

1 Potato,

4 Stalks of Celery,

2 Garlic Cloves,

1/2 Cup Onions,

4 Cups Chicken Stock,

1 Tablespoon Thyme, Oregano, and Basil.

1Tablespoon Salt.

What To Do:

Peel potatoes and chop the veggies. Sauté the celery and onion in a tablespoon of olive oil then add the rest of the ingredients and simmer for about 30 minutes. Once all the vegetables are cooked through place in blender and puree. Add salt and pepper to taste.
