Stuffed Shells

This is a yummy dinner that freezes beautifully.  I always make 2 or 3 batches and freeze them for those nights when there is no time to cook.   I think about 3 shells per person works well. With my make ahead tricks this can be thrown together fairly quickly.

What I Make Ahead of Time:  I cook the meat, onions, and bell peppers ahead of time, or at least get the veggies chopped and I always have marinara sauce in the freezer.

What You Need:

Shells

1 lb.Hamburger Meat

1/2 Cup Chopped Onion

1/2 Cup Chopped Bell Pepper

Mozzarella Cheese

1 Cup Parmesan Cheese

2 cups  Marinara Sauce

What To Do:

Bring a pot of water to a boil.  While water is heating sauté onions and bell peppers in a pan. After about 5 minutes add hamburger and cook until done. Drain fat from meat and stir in marinara sauce. Once the water has come to a boil add salt and shells and cook as directed on package.   One the shells are cool enough to handle place a piece of mozzarella cheese in the bottom of each shell and fill with meat filling. Sprinkle with Parmesan cheese. At this point the shells can be frozen or placed in the oven.  Bake at 350 degrees for 20 minutes.
