Spaghetti and Meatball Cups

These are a fun way to bring a little Italian into any party.  The sauce and the meatballs can be made ahead and frozen so they can always be on hand for a simi quick appetizer.  This can be a little tedious so I would suggest making the meatballs at least a few days before If you are really organized you could even cook the pasta the day before, just don’t forget the olive oil or it will stick together. I would pair this with the meatball crostini. Two different but similar snacks to put less stress on you.

What You Need:



2 Eggs Whisked

1/2 Cup Parmesan Cheese

1/2 Cup Marinara Sauce

What To Do:

Follow the directions on the spaghetti box to cook pasta.  Don’t forget to salt the water before adding the pasta. ONce pasta is done. Drain, rinse and add 1 Tablespoon of olive oil so that the pasta won’t stick together once it is cool. Once the pasta is cool add the eggs, parmesan cheese, and marinara sauce and mix together. try not to break up the noodles to much.

Now for  the fun!  Spray some cooking spray into mini muffin tins. With a fork spin a mouth sized portion, just like you would if you were going to eat it, and place it into each tie.  Place on mini meatball in the center of each nest and bake in the oven at 350 degrees for about 10 to 15 minutes.
