Mushroom Soup

If you like mushrooms your going to love this easy soup.  With only four ingredient you can’t go wrong.  All you need are mushrooms, lemon juice, corn starch and chicken stock. The lemon adds a wonderful fresh flavor. The dill lends itself beautifully to the lemon and mushroom flavors. A dollop of sour cream would have been the crowning touch, but sadly, I was out.

What You Need:

1 Tablespoon Butter

1 Package Chopped Mushrooms

1 Tablespoon Corn Starch

2 Tablespoons Lemon Juice

4 Cups Chicken Stock

Salt and Pepper to Taste

What To Do:

In a large skillet, melt the butter and add the mushrooms.  Drizzle with the lemon juice. This is your chance to get some great flavor out of those mushrooms. Add salt and pepper to taste.  In a small bowl mix together about 1/2 cup warmed chicken broth with the corn starch.  Make sure there are no lumps.  Add the rest of the chicken stock and the corn starch mixture to the mushrooms. Bring to a boil and let simmer for about 15 minutes.  Enjoy.
