This are so easy to make and just yummy.  The roasting brings out such a sweet flavor in the root vegetables that they don’t need that much done to them. For this dish I used turnip, parsnips, carrots and potatoes.  I tossed them in some olive oil, salt, pepper, and some dried thyme. 

What You Need:

3 Carrots

4 Chopped Potatoes

3 Parsnips

1 Turnips

2 Tablespoons Olive Oil

2 Tablespoons Salt

2 Tablespoons Pepper

2 teaspoons Dried Thyme

What To Do:

Preheat oven to 400 degrees Peel all the vegetables except the potatoes.  Chop into even pieces.  Toss with olive oil, salt, and pepper.  Bake for about 1 hour. The veggies should be cooked through.
