White Bean and Asparagus Salad

This is a really nice and light salad.  The lemon vinaigrette in this salad really adds a bright burst of flavor.  I like to marinade the bean in the vinaigrette for an hour or so before putting the salad together, much more than that and the beans might start to loose there texture. I usually make this salad with leftover asparagus.

 What You Need:

Leftover Asparagus

1 Can White Beans

Sliced Red Onion

Lettuce

Champaign Dressing

Extras:  You can also add fresh Basil and a sprinkle of Parmesan Cheese
