Asparagus and Pea Salad

This is a refreshing salad that is easy to throw together with leftover veggies from the night before.

What You Need:

~ For the Dressing:

1/4 Cup Lemon Juice

1 teaspoon sugar

1/2 teaspoon Salt

1/4 teaspoon Pepper

1/4 Cup Oil

Put all the ingredients except the olive oil into a bowl. Slowly disk in the olive oil. Like I said earlier, I like to marinade the beans in the dressing for an hour or so before I put the salad together.  The onions can also be marinated ahead, but I would do that in a separate bag.

Left over Cooked Asparagus

Frozen Peas

Lettuce

Tomatoes
