Soup is one of my favorite things, not only to eat, but to make.  I love the way the kitchen feels and the house smells as a big pot of soup simmer on the stove. Most of the soups that I make can be made ahead and they freeze nicely.  I like to store my soups, and lots of other things, in zip lock bags. I store them in single servings and freeze them for easy anytime meals. 20140103-095346.jpgThis Kale and White Bean Soup is low calorie and easy to make.  I alway have white beans in the pantry and sausage in the freezer, so the only thing I have to pick up at the store is the kale.

20131223-125759.jpgThis Meatball and Couscous Soup is super yummy. I make the meatballs ahead of time and keep them in the freezer. The couscous is always in the pantry, the chicken stock in the freezer, and the parsley is from my herb garden.  If you are going to make this one ahead of time, do not add the couscous, it will suck up all the liquid. 20131231-073035.jpgThis Cauliflower and Roasted Garlic Soup is another easy soup that is low in calories and full of flavor.

20140103-095334.jpgPotato and Rosemary Soup cold not be easier to put together.  I usually make this soup at might while i am putting dinner together. It tastes better when made ahead and allowed to marry.  It also freezes beautifully.
