Kale and White Bean Soup

20140103-095323.jpgThis is a very simple soup to assemble.  Super tasty and low in calories. I usually use Keilbasa sausage but was out this time so I used a precooked smoked link which worked really well.

What You Need:

2 Tablespoons Olive Oil

1/2 Shallot Minced

1 Bunch Kale20140103-095346.jpg

2 Cans White Beans

1 Pound Sausafe

8 Cups Water


What To Do: Mince the Shallots, remove the big vein from each kale stalks, open and drain the beans, and slice up the sausage.  Heat a sauce pan, add olive oil and shallots and cook for about 5 minutes or until soft.  Add all of the ingredients except the beans and bring to a boil. Turn down to a simmer for about 20 minutes. Add beans and continue to simmer for about 10 minutes.
